I searched for a recipe that I thought my family would eat and then ended up adapting the Recipe for Cashew Chicken from Food.com that I found for my family. My family voted this into their top three meals of the year to date. For them this is a big deal!
Ingredients:
- 1/2 cup chicken broth
- 1 tablespoon corn starch
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 lb chicken breasts cut into 1 inch pieces
- 1 large green pepper cut into 1 inch pieces
- 1 medium onion, cut into 1 inch pieces
- 1 (8 ounce) can water chestnut slices, drained
- 1 cup roasted cashews
- baby pea pods
Directions:

Mix broth, cornstarch and soy sauce.

Heat wok or large skillet.

Add 1 tbsp of the oil and coat the surface.

Add chicken and stir-fry till done.

Remove chicken; set aside and keep warm.

Add remaining 1 tbsp oil to wok or skillet.

Add bell pepper, onion and water chestnuts; stir-fry to done.

Add cornstarch mixture to vegetables.

Cook and stir a few minutes until sauce thickens.

Stir in chicken, baby pea pods and cashews coating them with the sauce.

Serve with rice
