Cashew Chicken

I searched for a recipe that I thought my family would eat and then ended up adapting the Recipe for Cashew Chicken from Food.com that I found for my family.  My family voted this into their top three meals of the year to date.  For them this is a big deal!

Ingredients:

  • 1/2 cup chicken broth
  • 1 tablespoon corn starch
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 lb chicken breasts cut into 1 inch pieces
  • 1 large green pepper cut into 1 inch pieces
  • 1 medium onion, cut into 1 inch pieces
  • 1 (8 ounce) can water chestnut slices, drained
  • 1 cup roasted cashews
  • baby pea pods

Directions:

  1. Mix broth, cornstarch and soy sauce.
  2. Heat wok or large skillet.
  3. Add 1 tbsp of the oil and coat the surface.
  4. Add chicken and stir-fry till done.
  5. Remove chicken; set aside and keep warm.
  6. Add remaining 1 tbsp oil to wok or skillet.
  7. Add bell pepper, onion and water chestnuts; stir-fry to done.
  8. Add cornstarch mixture to vegetables.
  9. Cook and stir a few minutes until sauce thickens.
  10. Stir in chicken, baby pea pods and cashews coating them with the sauce.
  11. Serve with rice
