Ham and Swiss Impossible Pie

I needed to find something quick using all the ingredients I had in my refrigerator and I came up with this.  It is a take-off on Impossibly Cheeseburger Pie from Bettycrocker.com.

It was a hit.  Quick, easy and cheesy all the things my family and I love.

Ingredients:

1 lb diced ham
1 Tablespoon of butter
1 medium chopped onion
1/2 teaspoon salt
1 cup shredded Swiss cheese plus extra for topping
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs
Directions:
  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook  onion over medium heat in  butter 8 to 10 minutes, stirring often.   Spread in pie plate. Cover with diced ham and sprinkle with cheese and salt.
  • In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
  • Bake about 25 minutes or until knife inserted in center comes out clean.
