Feta Cheese and Bacon Stuffed Chicken Breasts

This is another Pinterest recipe.  I have been really interested in Pinterest lately.   Okay, obsessed with Pinterest lately.  But this has all the flavors I knew my family would love.  Feta and bacon.  My children eat feta cheese right from the container.  I can’t keep it out or it will be gone within 5 minutes.

I followed the  original recipe from Domestically Dreaming for Feta Cheese and Bacon Stuffed Chicken Breasts fairly closely with just a few minor changes.

Ingredients
8 tablespoons olive oil
2 teaspoons lemon juice
4 cloves crushed garlic
1 tablespoon dried oregano
salt and pepper to taste
4 skinless, boneless chicken breasts
4 oz.  feta cheese
1/2 lb. of bacon, fried and drained

Directions

  1. Preheat oven to 350 degrees.
  2. Pound chicken down to about 1/4″ thickness evenly across the breast.
  3. In a small bowl combine the oil, lemon juice, garlic, oregano, salt and pepper. Mix together. Place chicken in a 9×13 inch baking dish and pour oil mixture over chicken.
  4. Stuff each chicken breast with 1 oz feta cheese and bacon strips. Secure open sides with toothpicks.
  5. Bake uncovered at 350 degrees F (175 degrees C) for 30 to 35 minutes.

This was a pretty good recipe.  It was VERY salty (feta, bacon and salt) but my family still gave it a thumbs up.  Next time I will add some onion, up the lemon juice, maybe some garlic and marinate the chicken a bit before I cook it.  The chicken itself was very bland and we are a family that is big on FLAVOR!

But, overall it was a decent beginning for a recipe.
