So another day of me not thinking about dinner until just about 30-45 minutes before I need to have something on the table. I stood in front of the dwindling refrigerator wondering what I can have that will not be a repeat meal for my family. I came close.
Not a great picture but this Quiche (or Egg Pie as it is known in our family) was actually quite yummy! I like Quiches that are not all scrambled eggs but have a bit of a custard feel to them. This was definitely different than the first Quiche I tried from Julia Child. Plus I used more cheese than called for as in my family the more cheese in something the better my family will like it.
This Ham and Cheese Quiche recipe from Allrecipes.com was the perfect dish for us on the cold, draft Spring evening. Also, I still have quite a bit of ham to use up and am trying every way possible to use it up!
Ingredients:

2 tablespoons all-purpose flour

1/2 teaspoon salt

1 cup half-and-half (I used fat-free and it was fine)
- 3 eggs
- 2/3 cup Swiss cheese
- 1 9 inch single crust pie shell (I used a frozen pre-made one, thawed)
- 1 1/2 cup of diced ham
- 1/2 cup shredded Cheddar cheese, plus additional to spread on top if desired
- black pepper to taste
Directions
- Preheat oven to 350 degrees F.
- Beat together flour, salt, half-and-half and eggs in a medium bowl.
- Place Swiss cheese flat in the pie crust. Pour the flour and egg mixture over the cheese. Cover with ham and top with Cheddar cheese.
- Bake in the preheated oven 45 to 55 minutes, until surface is lightly browned. Center will set.
This was incredibly rich and delicious. My children ate seconds and there was just one slice left for lunch the next day. I will make this again but probably play with the proportions a bit to get it more solid.
