There are times you have to make due with what you have on hand. We are still trying to be frugal as we still have half a month left before payday and there is still so much we want to do before school starts. And there are all those pesky things you have to buy before school starts. Our son’s school does a Back to School Day where the kids get their pictures taken, deposit their lunch money, buy years books, buy gym clothes, sign up for busing, get their schedules and pay their deposits on their computer insurance. So by the time you walk out you have paid $200 before school even starts!
This dish is something I could picture my grandmother making. I picture her standing in front of an old stove with a cast iron skillet full of potatoes. Very simple and from items we had in the house. Instead of Kielbasa maybe she would use a piece of left over sausage or pork. Whatever she had on hand. Sometimes it is nice to get back to the simpler ways of cooking and eating.
Want to make this for breakfast place a fried egg over the top! Yummy!
Verdict:
This was a simple, super hearty meal. It wasn’t fancy but it tasted really good and you can add whatever spices you want to your potatoes to make them your own.
I served this with some green beans to round out the meal and we were all full without having to run to the store to pick up that one item.
Old Fashioned Potatoes and Kielbasa
Ingredients:
- 2 1/2 to 3 lbs potatoes, washed and peeled, shred with a large-bore grater
- 1 1/2 lbs. kielbasa, thinly sliced
- 1/4 cup butter
- seasoning – your choice – Morton’s Nature’s Seasoning, garlic, cayenne, chili powder,etc…
- salt and pepper, to taste
- hot sauce, for serving if desired
Directions:
- Shred potatoes into a large bowl of cold water. Stir until water is very cloudy. Drain potatoes. Recover with fresh cold water. Stir again. Drain potatoes well. Pat potatoes dry with paper towels. Squeeze out any extra moisture in the potatoes.
- Heat butter in large skillet. Add potatoes. Add your seasoning and stir well.
- Allow potatoes to brown as you are cooking. It is hard to see in the picture but the bottom of the potatoes are browned.
- Add kielbasa as the potatoes are browning. Stir well.
- Serve warm with hot sauce, if desired.

I ❤ those sales! We have a ton of pork right now as it was cheap but there was just another swine flu outbreak near us so it will probably spike soon.

This sounds delicious and comforting. I like to do kielbasa, potatoes, and green beans in the crock pot for a no-fuss supper. The kielbasa really flavors the potatoes and beans nicely!
