I have seen this recipe all over Facebook and Pinterest. Of course that means I need to try it to see what all the hype is about. Of course I don’t follow the recipe exactly (like I expect you to change it too!). My family likes lots of flavor but not heavy citrus, especially lime, so I changed the spice profile just a bit to fit our family.

Verdict:

This was pretty good. It was very simple to make and my kids loved the sticky sauce. To me the sauce was “okay” but they asked for it again so I will oblige. The baked chicken tenders were good and juicy.

Hint for Leftovers: My son wanted the leftovers in his lunch the next day so I made some rice and cut the tenders up and mixed them into the rice. Added a bit of soy sauce and he thought it was a whole new lunch just for him! Perfect in his hot thermos for school.

I served this with baked sweet potatoes and green beans.

Sticky Barbecue Lime Chicken Tenders

  • Servings: 6-8

Ingredients:

  • 2 lbs. chicken breasts, cut into strips
  • 1 cup flour
  • 2 cups Panko bread crumbs
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder (for chicken coating)
  • 1/2 teaspoon chili powder
  • 2 eggs, beaten
  • 2 tablespoons milk
  • salt and black pepper
  • 1 cup barbecue sauce (I used Sweet Baby Ray’s which is my favorite)
  • 1/2 cup brown sugar
  • juice of one lime (use more to your tastes)
  • 1 teaspoon garlic powder (for sauce)
  • ranch dressing for dipping, if desired

Directions:

  1. Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper.
  2. Beat milk and eggs together and place in a shallow or on a plate to coat chicken. Pour Panko bread crumbs on a second plate and mix with the onion powder, 1 teaspoon, garlic powder, chili powder, salt and pepper.
  3. Pour flour into a gallon size zip top bag. Add chicken and toss to coat chicken in flour.
  4. Remove chicken with tongs and dip into egg and milk mixture to coat completely. Allow excess to drip off.
  5. Roll chicken strips in Panko bread crumb mixture to coat.
  6. Place chicken on baking sheet. Bake for 10 minutes. Remove pan from oven and turn chicken strips over.
  7. While chicken is still cooking mix barbecue sauce, brown sugar, lime juice and garlic powder in a small sauce pan over medium heat. Stir until the sugar is melted and mixture is bubbly.
  8. Continue baking for 10-15 minutes until chicken is cooked through and coating is browning.
  9. Remove pan from oven. Coat each chicken strip in sauce and serve with dipping sauce if desired.

  4. Stubb’s is my favorite BBQ sauce, but then again, I am from Texas! It looks sticky-finger-licking good!

      1. They have many different varieties, in addition to all kinds of marinade sauces and rubs. If they have it in Oregon, I’m sure they have it up in Michigan! It’s made in Austin. 🙂
