Sloppy Joe Pasta

I am always trying to turn some of our favorite dishes into new recipes. My family loves Sloppy Joes. The other night I had thawed about 2 lbs. of ground beef and was trying to come up with a meal that I could make without having to run to the store for any ingredients. We had no hamburger rolls. I could make some with my bread maker but that would still take about 90 minutes and I didn’t think I or anyone else wanted to wait that long. I could make biscuits but that just didn’t thrill me. So, I decided to take my own advice and use one of the many boxes of pasta I bought in December for $.80.

Verdict:

This was super simple to make and my family loved it! It had the perfect vinegary taste of a Sloppy Joe and the comfort of pasta. Sigh. Both kids had 2 helpings and my dear daughter didn’t complain once about the onions!

I served this with carrot and a green side salad to complete the meal.

  • Servings: ”6-8″
  • Difficulty: ”easy”

Ingredients:

  • 4 tablespoons butter
  • 1 large onion, finely diced
  • 2 Bell peppers, diced
  • 3 cloves garlic, finely minced
  • 1 1/2 – 2 lbs. ground beef
  • 1/4 cup dark brown sugar
  • 1/4 cup mustard
  • 1/4 cup Worcestershire Sauce
  • 2 tablespoons Chili Powder
  • 2 teaspoons Paprika
  • 2 cups ketchup
  • 1/2 cup Apple Cider Vinegar
  • salt and black pepper, to taste
  • for serving (if desired): cheddar cheese, green onions,

Directions:

  1. Cook pasta according to package directions. Drain after cooking.
  2. As the pasta cooks in a large skillet over medium heat melt the butter. Add the onion to the pan and stir until it is translucent.
  3. Add the peppers and garlic to the pan and stir occasionally for 1 minute then add the ground beef and break it up with a spoon, stirring it all together.
  4. Allow to cook for 3-5 minutes, stirring occasionally, until browned.
  5. Add the brown sugar, mustard, Worcestershire, chili powder, and paprika. Stir together and then add the ketchup and vinegar. Mix together the pasta and meat mix.
  6. Allow to cook for 5 minutes, until it thickens a bit,  season to taste and serve.
  7. Serve with toppings as desired.

It has a bit of a sweet/tart taste. Sloppy Joes are a big American thing. Kind of like chili but with a tart flavor.
