Homemade Pumpkin Bread


Using up all my canned goods before it is time to stock up again for fall has many benefits such as this delicious pumpkin bread. The best thing about it is that it makes 2 LARGE loaves so we had one to eat and one for dinner the next night. Yes! Dinner! I cannot wait until tomorrow to show you what I did with the second loaf for a fun family dinner. Seriously, check back tomorrow to see our dinner.

Verdict:

I love this bread. It has a strong flavor of cinnamon and nutmeg which we love. If those are not your favorite flavors lessen the amounts to suit your family.

We ate an entire loaf the first night. It was so good!

Ingredients:

  • 3 1/3 cups flour
  • 1 1/2 teaspoons ground nutmeg
  • 3 teaspoons cinnamon
  • pinch of cloves
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons salt
  • 2 2/3 cups sugar
  • 2/3 cup butter
  • 4 eggs
  • 1 (30 oz) can of pumpkin puree (NOT pie filling)
  • 2/3 cups water

Directions:

  1. Preheat oven to 325. Prepare 2-3 large loaf pans by greasing and flouring the pans.
  2. In a large bowl, combine all the dry ingredients; flour, pumpkin pie spice, nutmeg, cinnamon, baking soda, baking powder and salt. Stir well then set aside.
  3. Beat together the softened butter and sugar until well combined.
  4. Add the eggs one at a time and then the pumpkin beating well between each addition. Once mixed together, add the dry ingredients slowly alternating with the water beating well in between each addition.
  5. Place mixture into 2-3 large loaf pans.
  6. Bake about an hour, slightly less for smaller loaves.
  7. Let cool on a baking rack before slicing.

  3. This looks amazing. I have not see pumpkin puree in South Africa. I will have to try a specialty store.

      Pumpkin puree in America is usually partly squash puree mixed with some pumpkin. I never thought of pumpkins as being mostly an American food but I guess they are. Thanks!

    I love pumpkin bread. However, it’s been a decade since I’ve cooked with can pumpkin. Every year I process my own. The taste is so different, I can’t go back to can. However, my pups LOVE canned pumpkin mixed in with their food.

        Thanks. I am heading to the printer. I thought I would make this later in the fall. It looks really moist. It took me a long time to figure out how to code a recipe from the instructions that was offered. I kept playing with it on a post I had done years ago until it finally dawned on me what I was doing wrong. I went back and edited almost all my old posts and noticed a increase in views in the following months. It is easy to make a mistake. It only takes a missing bracket or equal sign to mess things up. I have had a long learning curve trying to blog..
