When All Else Fails: Pancakes

Last night’s dinner was to be Chicken Tetrazinni. As you can see this is NOT Chicken Tetrazinni. I had all the ingredients for Chicken Tetrazinni. In fact we had gone to the store to buy the whole milk, cream, and Parmesan cheese to make the Chicken Tetrazinni. But, I did not want it. Yes, I did not want it. I have been craving pancakes since last Friday. I had a ton of stuff to do all day and I wanted warm and comforting food, which Chicken Tetrazinni. I wanted butter, syrup, and warm pancakes.

We all have these nights when our meal plans go awry. It’s okay. I now have frozen chicken and the ingredients to make the dish another day.

Verdict:

This satisfied my craving. Lots of warm real maple syrup and butter were just what I wanted.

When All Else Fails: Pancakes

Simple Pancakes for a busy weeknight dinner.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk or buttermilk
  • 2 large eggs
  • 1/4 cup melted butter, cooled slightly

Directions:

  1. In a large bowl mix flour, sugar, baking powder, baking soda, and salt until well blended and there are NO lumps. Make a well in the center. Add buttermilk, eggs, and melted butter – slightly cooled. Stir until just mixed together.
  2. On a griddle melt butter over medium – medium low heat. Make pancakes with 1/4 to 1/3 cup pancake batter. Once bubbles form on one side carefully flip to the second side until golden brown.
  3. Remove pancakes to a plate in oven to keep warm until all pancakes are made. Serve with warmed syrup and butter as desired.

  2. These are my go to Saturday morning breakfast. They just define weekend for me.

      1. It helps, it lets my husband and I relax with our coffee and breaks up the mundane cereal or toast we quickly make throughout the week.
