Italian Sausage with Peppers, Caramelized Onions and Feta

Last night for dinner we had Italian sausage with red and green bell peppers, caramelized onions and feta cheese on a fajita style tortilla.   It was delicious and easy to make.

Caramelized Onions

  • one whole sweet onion sliced about 1/4″ thick slices
  •  2 tablespoons of butter
  • Balsamic Vinegar (optional)

Put both in a small frying pan and turn on med-low heat.  Stir every few minutes for about 20 – 30 minutes until they start to brown and turn a bit darker at the edges.  If you like balsamic vinegar throw a splash on the onions in the last 2-3 minutes of cooking and scrape up all the nice brown bits at the bottom to make them even sweeter.

Fried Peppers

  • one green bell pepper sliced
  • one red bell pepper sliced
  • 2 tablespoons of  Extra Virgin Olive Oil (EVOO)

Place sliced peppers in a frying pan and drizzle with the EVOO.  Cook 15 minutes or so stirring occasionally to desired doneness.  My family likes them cooked well so I tend to cook them a bit longer but some families prefer them a bit crisper.

I cooked 8 – 4″ links of Italian sausage per instructions on the package.   Served it on a Fajita style tortilla (a bit thicker than a regular flour tortilla), with onions and peppers liberally sprinkled over the top.  A teaspoon of Feta cheese tops off the sausage for an unexpected bit of saltiness.

There was nothing left at the end of our meal for leftovers.
