Garlic Shrimp with White Wine Sauce

This was a delicious and easy week night dinner for us.  I started with the recipe for Garlic Shrimp and White Wine Sauce from Cooking-Out-Loud.com.

Ingredients:

  • 6 cloves of garlic, minced
  • Salt
  • Pepper
  • 4 Tablespoons olive oil
  • 1 pound shrimp (I used frozen cooked shrimp)
  • 1/2 cup butter
  • 1 cup white wine
  • Parsley
  • Basil
  • Feta Cheese (if desired)

I used frozen cooked shrimp so I started by thawing them in a colander under a stream of cold water.  Once the shrimp were thawed I took off the tails and discarded them.

I started the water boiling for the pasta that I would serve with the Shrimp.  I cooked this by the directions on the package.

When the pasta was cooking, I took a fry pan and added the olive oil, butter and garlic.  Once the garlic started to slightly brown I added the butter, shrimp, white wine, light salt and pepper to the pan.  I let the shrimp cook and the sauce thicken slightly.

Once the pasta was drained I served the Garlic Shrimp with White Wine Sauce over the pasta with a sprinkling of Parsley, Basil and Feta.

My family LOVED this recipe.  There was nothing left by the end of dinner.  I was easily able to adapt it for my gluten-free son by switching the noodles for his to rice noodles.
