French Toast with Breakfast Sausages

Even thought I am playing this silly little dinner game with myself I still have all the obligations I had before and tonight was one of those nights.  I found the quickest thing on my dinner list that I could prepare and off I went to two Parent Teacher Association (PTA) meetings. Plain old-fashioned French…

Chicken Noodle Soup

This was one of my second chance dishes.  I roasted a chicken on Saturday, made chicken soup on Sunday for dinner Monday night.  This also works with a store bought rotisserie chicken. I love making chicken noodle soup because it is so much better than any canned soup.  Having a gluten-free/soy-free son it is hard…

What I Have Learned so Far…

I began my game of seeing how many dinners I could make before I repeated a meal.  I had gotten lazy in my shopping, planning and cooking.  We were having pasta three nights a week for dinner, hot dogs once or twice a week and picking up fast food or eating out the rest of…

Super Bowl Sunday – Pizza Dip

Roast Chicken

I roasted a chicken for dinner on Saturday.  It was really good and easy. All I did was baste a chicken with butter, salt and pepper and baked it.  The skin was crispy and flavorful.  The chicken meat was moist and flavorful. I saved the carcass and leftover meat to make chicken soup for another…

Pepperoni and Caramelized Onion Pizza

This picture does not do justice to the delicious pizza.  I forgot to take a picture until we had already eaten half of it.  Yummy! I made my own pizza dough following the directions in my bread maker’s manual.  My daughter had a friend over so they played with the dough to lay it out. …

Cheeseburger Hamburger Helper

Thursday night’s dinner was something I am not overly proud of, though it fits my game.  We had Cheeseburger Hamburger Helper.  This is a dish my daughter used to love.  Tonight, she was okay with it but I think all my cooking is spoiling her a bit because she wasn’t overly thrilled with it.

Italian Sausage with Peppers, Caramelized Onions and Feta
