“Some days are like that even in Australia,” is a favorite saying at our house. The quote from Alexander and the Terrible, Horrible, No Good, Very Bad Day by Judith Viorst pretty much sums up yesterday for me.
I don’t very often use pre-packaged meals frozen or boxed. If you also notice only one or two of my recipes even use cream soups. But, I was thankful today to have this on hand. The Stouffer’s Chicken Enchiladas with Cheese Rice dinner was in my deep freezer downstairs and all it took was opening the box, loosening the foil and baking for 1 hours and 20 minutes. Perfect.
I was worried that my children wouldn’t eat it as it is spicy but I let them put a bit of sour cream over the top and they both actually liked it very much. Yes, a bit heart-breaking for me as I like to think they like my cooking better than any boxed meal they could ever have but they actually said they would eat this again. From my children that is a ringing endorsement.
So life continues on and I learn that boxed meals occasionally will not harm my children or let them think any less of me as I continue to try to make different meals for them.
