I have to admit what drew me to this recipe was how very easy it was to prepare and I had everything in my pantry to make it.
Ingredients:
- 2 lb. pork tenderloin
- 1 16 oz. jar of Hellman’s mayonnaise
- 1 packet of Lipton Onion Soup Mix
Directions:
- Pre-heat oven to 350 degrees.
- Pat tenderloin dry with paper towels.
- Liberally spread jar of mayonnaise over pork loin covering completely.
- Take a rolling-pin and run it several times over the Onion Soup packet to crush all the ingredients inside.
- Sprinkle packet of soup mix over the pork loin.
- Bake until completely cooked through.
The pork was amazingly moist. But, it was too salty for my family. We ended scraping off the coating to be able to eat the pork. Next time I would add about 1/2 to 2/3 or the packet to the mayonnaise before I spread it on the pork loin. I think that may spread the flavor better throughout the pork loin and cut down on the salty taste.
