When I saw this recipe on Pinterest I thought I had hit the Holy Grail of recipes. A Weight Watchers recipe with garlic and shrimp. Two of my families favorite items. I should have been a bit more skeptical when I was making this that something wasn’t quite right.
The original recipe I followed is for Garlic Baked Shrimp at Laa Loosh.
Ingredients
- 1lb shrimp, I used frozen shrimp with the tails removed
- 2 tbsp butter, melted
- Juice from ½ a lemon
- 2 tbsp parsley, finely chopped
- 2 tbsp grated Parmesan cheese
- 1 tsp paprika
- 4 cloves garlic, minced
- 1 cup corn flakes cereal, crushed
- Salt & pepper to taste
Instructions
- Preheat oven to 425 degrees.
- In a medium-sized bowl, combine shrimp, lemon juice, garlic, paprika and salt & pepper. Pour into a small baking dish.
- In another bowl, combine corn flakes, butter, Parmesan cheese, lemon zest and parsley until it reaches a course, mealy consistency – just enough to evenly blend the ingredients.
- Sprinkle corn flakes mixture over shrimp. Transfer to oven and bake until shrimp are pink and cooked through, about 10-12 minutes.
I couldn’t wait to get this recipe to the table. I had visions of lovely crispy outside baked shrimp. What I ended up with was a soggy mess. It was awful. I ended up scraping off the topping, which did not crisp up nor brown during baking, off the shrimp to make it edible.
I will try this recipe again but will be tweaking it a bit to add more flavor and crispness to the topping.
