Cheeseburger Frittata

As we are finishing eating out of our pantry, refrigerator and freezer to clean them all out it is getting harder and harder to come up with meals.  The only thing I am buying is a few fresh fruits and vegetables and dairy.  Other than that ingredients must all come  from staples found in my house.

Tonight I had a green pepper, red peppers, two tomatoes, an onion and some leftover boiled potatoes.  The meat I had taken out of the freezer was ground beef.  I have cheese, eggs and spices.  A fritatta it is!

This is the first frittata I have ever made so I was a little unsure but figured the worse that could happen is my family asked me not to make it again.  It was good.  My son put ketchup over his as I called it a Cheeseburger Frittata.  They all thought it was good.  Not overly flavorful but still good.  My family loves big, bold flavors and this was more subtle.   They all said they would eat it again so in my book that it a hit.

Ingredients:

  • 1 lb. ground beef
  • one medium, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 3 large boiled potatoes, cubed
  • 2 tomatoes, diced
  • 1 tsp minced garlic
  • 1 tsp oregano
  • salt and pepper, to taste
  • 6 eggs
  • 1/2 cup fat-free half and half
  • 2 cups of grated cheddar cheese, divided
  • parsley for garnish

Directions:

  1. Preheat oven to 375 degrees.  Make sure you have a  skillet that can go in the oven as once everything is mixed you will be placing the entire pan directly into the oven.
  2. Brown ground been if skillet over medium heat.  Break into small pieces at it is cooking.  Remove pan from heat and drain grease except 2 TBSP.  Set meat aside in a bowl.
  3. Return pan to burner and add potatoes.  Brown over medium-high heat turning occasionally.   Season potatoes with garlic, oregano, salt and pepper.
  4. While potatoes are browning mix eggs and half and half in a bowl.  Beat well with a fork.  Add one cup of grated cheese and stir well.
  5. When potatoes are lightly golden brown remove the pan from heat and add cooked ground beef and diced vegetables to the pan.  Pour egg mixture over ground beef, potato and vegetable mixture and stir to combine well.
  6. Put mixture back on the burner for 3-5 minutes until it starts to set.  DO NOT STIR!
  7. Once it starts to set remove the pan from the heat and sprinkle with one cup of cheese and parsley.  Place entire pan in oven for 3-5 minutes for cheese to melt and entire mixture to set well.
  8. Remove pan from oven and let sit for 2-3 minutes the cut into slices and serve.
