Buffalo Chicken Pizza

I thought once school ended things would slow down and we would have leisurely dinners in the evening on the patio under little umbrella lights.  Who was I kidding?  I think things are busier than ever.   I am still having to create dinners to go at least once a week.   We are spending a great deal of time at the beach and fountains during the warm evenings.  I wish we had our grill but we when we moved the grill did not make the cut in items to bring.

We are still trying to finish the month eating out of our freezer and pantry and as each day goes by it is getting more and more difficult.  I have plenty of meat but it is the “other stuff” that is getting harder and harder to find in the pantry or the backs of my cupboards.

I found 2 pre made pizza crusts and I had chicken thawing in the refrigerator.  Then I headed to Google.  Cheese, chicken, barbecue sauce and hot sauce?  YES! The recipe for  Buffalo Chicken Pizza from Food.com was my jumping off point for our creation.

This pizza had a TON of flavor.  It was spicy so cut down on the hot sauce if you don’t want it so spicy.  My kids thought it was fantastic but they like spicy and flavorful foods.  The two pizzas were gone after dinner.

Ingredients:

  • 2 prepared pizza crusts
  • 1/2 cup of pizza sauce
  • 1/2 cup of barbecue sauce
  • 3 cups of cubed chicken, pre-cooked
  • 1 medium onion, sliced thinly
  • 1/2 cup of hot sauce
  • 1/4 cup of melted butter, divided
  • 3 cups of mozzarella cheese
  • Ranch salad dressing, I used Kraft but use your favorite

Directions:

  1. Pre heat oven to 400 degrees.
  2. Place 1 TBSP of butter in a skillet and add onions.  Cook over medium-low until they are well caramelized.  Stir frequently until brown.
  3. While onions are cooking place pizza sauce, barbecue sauce, hot sauce and rest of melted butter into a bowl and stir well.  If you are afraid of the heat add the hot sauce a bit at a time and taste for the proper proportions for your family.
  4. Spread the sauce mixture over the prepared shells.
  5. Sprinkle the chicken cubes, onions and cheese evenly over the two pizza crusts.
  6. Take the bottle of ranch dressing and drizzle it over the pizzas.  I like to just squirt it right from the bottle as I move back and forth across the pizzas.  You do not need to cover the entire pizza it is just a drizzle.
  7. Put pizzas into oven.  Bake pizzas directly on rack for a crispy pizzas.  Place on a pizza stone or pan for less crispy crust.
  8. Let bake 15-20 minutes until bottom of pizza is brown and top is melted.
  9. After removing pizza from oven let sit 5 minutes before cutting and serving.
