Baked Boneless Pork Chops

Spring 2013 029

First off this is a horrible picture for such a delicious dish.  For some reason my camera refused to focus well and the dish is mostly beige so it was really hard to get everything in focus especially against my white plates.

But, other than being a beige dish this was actually a really delicious dish.  My son, 10 years old, helped me prepare the entire meal.  All I did was read him the directions, oversee the cooking and minced the onions for him.  He really didn’t want to cry cutting the onions so I did it for him.  Other than that I got to watch my son create and be extremely proud of making his first “real” meal.  He has cooked canned food or frozen food before but this is the first time he had created the entire meal from scratch.

We put the chop and sauce over egg noodles and the kids devoured it!

Ingredients:

  • 1 cup all-purpose flour
  • 2 TBSP Morton’s Nature’s Seasonings
  • 2 cups milk
  • 4-6 boneless pork chops
  • 1/2 cup of butter
  • 1 small onion – chopped
  • 2 TBSP lemon juice

Directions:

  1. Mix the flour and Morton’s Seasoning on a plate.
  2. Set aside 1/2 cup of the flour mixture for later.  Dredge the pork chops in the remaining flour.
  3. Melt the butter, over medium heat,  in a large frying pan.  Add pork chops to pan and brown on both sides.
  4. Once browned remove pork chops to a 13×9 baking pan.
  5. Add the onion to the skillet and cook until tender.
  6. Stir in the 1/2 cup of flour mixture set aside in Step 2.  Blend in milk with a whisk.  Whisk 2-3 minutes until sauce has  thickened.  Remove from heat.
  7. Stir in lemon juice.
  8. Pour sauce over pork chops.  Bake covered in aluminum foil for 35 minutes.  Remove cover and bake an additional 15-20 minutes until cooked through.

My son will be making this tonight for dinner, with my help and supervision, he is just 6,(or, he will be on the 23rd, anyway), but he loves cooking. I appreciate this recipe, and we will let you know how it goes.
