This month we are on the eat cheaply plan.
We recently went on vacation and have tons of fun things planned for the month but it leaves little cash for groceries. As a stay-at-home mom I am trying to make my budget stretch as far as possible. Recently they had $.99 hot dogs on sale at the grocery story for the 4th of July holiday. I bought 6 packages knowing that this would be a tight month budget wise.
So, I am going to need to be creative in my hot dog cooking over the next few weeks. This was my first attempt, a hot dog modeled after a Philly Cheesesteak.
Now, I did some research and there is a huge debate on the type of cheese to use. I saw everything from Chez Wiz (eww!) to Swiss, Cheddar and Provolone. I chose what I had on hand, cheddar.
I served this with a green salad and a side of brown beans for a quick, yummy dinner.
Ingredients:
- 8 hot dogs, your favorite brand
- 8 hot dog rolls
- 2 medium peppers, sliced – I used one red, one yellow
- 1 medium onion, thinly sliced
- 2 TBSP butter
- 1 TBSP canola or olive oil
- 1 tsp garlic powder
- 2 tsp Worcestershire Sauce
- cheddar cheese, thinly sliced
- yellow mustard
Directions:
- Place butter in a medium skillet over medium-low heat. Add onions. Slowly cook they onions, stirring occasionally, until they are well caramalized. Place in 150 degree oven to keep warm.
- Remove onions from pan. Add the oil, peppers garlic powder and Worcestershire sauce. Cook the peppers until slightly al dente.
- While peppers are cooking start your hot dogs. Cook them whatever way you like best, grill, fry, boil….
- Once hot dogs are done start assembling by placing hot dog in a hot dog bun, slices of cheese down the entire side of the hot dog. Place peppers and onions over the top of the hot dog and drizzle with yellow mustard.
