My blog is about the game I play with my family. Making a different dinner every week night without repeating the exact same dish. I can use similar recipes with different meats or ingredients but there has to be at least one new dish at each meal. It is not just about the food. It is about my family. We all have grown in what we will try and in what we will eat. It is also our experiences of sitting down 5-6 nights a week for a meal together and when we go out our adventures. Food is a part of our life at every turn. Past, present and future.
My daughter is still not a fan of onions and rice but if the onions are diced small enough and she doesn’t see them she is fine. But, I still don’t eat Blue Cheese. It doesn’t taste good to me which is hard for my children to understand. I have to hide it or they will eat it right from the bowl before I am ready to use it in a meal. So I adapt meals to our preferences and I hope you do the same. Don’t take my recipes as the hands down Gospel of how a dish is made but rather look at it see what works for your family and play with it so they will like it. More spice, less spice, more cheese, less cheese, it is all up to you!
I love stuffed bread because it is so easy and versatile. You can stuff garlic bread with anything you like. They had large loaves of bread on sale for $1.99 recently so I picked up two. I knew we had ground beef the other night so this was really going to have to have a different flavor for my kids not to complain about ground beef two nights in a row.
Verdict:
This turned out MUCH better than I expected. The Buffalo sauce and the ground beef tasted really good together. With a bit of crunch from the garlic bread and the celery both kids were happy. My son actually ate some of the leftovers for breakfast the next morning!
I served this with a green side salad.
Buffalo Beef Stuffed Garlic Bread
Ingredients:
- 1 large loaf of Italian Bread or French Bread
- 1 – 1 1/2 lbs. ground beef
- 1/2 cup (plus or minus depending on heat desired) Frank’s Hot Sauce
- 1 cup sharp cheddar cheese (finely shredded)
- 1/2 cup celery, fine diced
- blue cheese, crumbled
- 4 tablespoons butter
- garlic powder
Directions:
- Preheat oven to 350 degrees.
- Slice bread horizontally into two large pieces. Remove bread from the bottom piece to make a bowl to place your meat in leaving about 1/2″ around the edges and 1/4″ at the bottom.
- Lay the two pieces on a rimmed baking sheet.
- Cook ground beef in a medium skillet over medium heat breaking into small pieces with the side of the spoon as it cooks. Drain off any fat when it is thoroughly cooked.
- Add celery to skillet and allow beef and celery to cook for about 2-3 minutes while stirring occasionally.
- Remove pan from heat and add hot sauce and cheddar cheese. Stir to coat meat in sauce and cheese. If you wish it to be more spicy add a bit more hot sauce and a few dashes of Cayenne Pepper at this point.
- Pour meat into the bottom half of the bread (bowl). Sprinkle top with blue cheese.
- Spread sliced top of the bread with butter and sprinkle with garlic powder. You can decide how much garlic you like on it. Usually 1-2 teaspoons is sufficient for most people.
- Bake for 10-15 minutes until top is browning and cheese has started to melt.
- Remove pan from oven.
- Place top of the bread on the bottom half to make a loaf. Slice and serve with a side of hot sauce, ranch dressing and carrots.
