Well, we had our snow day yesterday. It was WONDERFUL! I love snow days just as much as the kids. I like having everyone home. The kids actually played a game or two together, willingly, and my son wanted to make a sweet treat. I was scouring pages of what he could possible make and that we had all the ingredients for.  Then I remembered I had seen these pretzel bars on Toronto Cooks. com.

Thankfully, I had pinned the recipe for the No Bake Chocolate Pretzel Peanut Butter Squares (click for link to original recipe). We had the ingredients and off he went.

Verdict:

These were a great, easy, sweet treat! My son made them on his own with a little guidance from me. He loved that there was no actual baking involved and the only help he needed was for me to hold the hot bowl of chocolate/peanut butter while he scrapped it out for the topping.

These hit the salt, sweet spot that my family loves. We used the original recipe and after making one batch decided to change it up a bit and use butterscotch chips instead of chocolate chips in the second batch. They were a totally different and tasted great too.

Both children have their favorites but my daughter wants to try making the chocolate bars with a layer of caramel in them next time. Both children said the bottom reminded them a bit of crunchy peanut butter fudge.

Trisha Yearwood's No Bake Pretzel Bars

  • Servings: 28

Ingredients:

  • 1 1/2 sticks of butter (12 tablespoons), melted
  • 2 cups pretzels, crushed into small pieces (be careful to leave some small pieces and not over crush them)
  • 1 1/2 cups confectioners’ sugar
  • 1 cup plus 1/4 peanut butter, divided (your choice smooth or crunchy – we like the crunchy)
  • 1 1/2 cups milk chocolate chips (or butterscotch)

Directions:

  1. Mix melted butter, pretzels, 1 cup peanut butter and confectioners’ sugar in a bowl until well blended.
  2. Press the mixture into a 9″ x 13″ baking dish.
  3. Combine the remaining 1/4 cup peanut butter and chocolate chips in a microwave safe bowl. Microwave in 30 second increments, stirring well between each interval until the peanut butter and chocolate chips are melted and well blended. Two intervals are usually enough.
  4. Spread the peanut butter-chocolate mixture over the pretzel base in a thin layer.
  5. Refrigerate at least one hour before cutting into squares.

      It was much sweeter than the chocolate and reminded me of the Chow Mein butterscotch cookies we used to make as kids.

      They were very easy (I held the hot bowl while they scraped the chocolate out) and sweet and salty all at once!
