Slow Cooker Baked Potatoes

You all know I love my slow cooker. But, I think I may have just fallen even further in love with it after finding this great tip for baking potatoes. I have always loved that I can have dinner cooking in my slow cooker when I am busy and just finish adding some pasta, fresh herbs or rice when I got home.

The dinner, above, was baked potatoes with some leftovers and condiments. I had some leftover ham in the freezer which I thawed and minced, a broccoli head to steam, some condiments. I am already thinking of other leftovers that would become great baked potatoes!

Verdict:

This was great! I swear the heavens opened up and the angels sang because dinner was so simple yet I felt like I was giving them something fairly healthy. Outside of the baking of the potatoes dinner took 15 minutes to prepare. We laid everything out on the counter buffet style so each person could make their own. This would be great for a teen party or football party. Hearty and simple.

I am thinking in summer too this would be excellent because you will not be heating up your house with the oven but rather let the slow cooker do the work!

Slow Cooker Baked Potatoes

  • Servings: 2-8
  • Difficulty: easy
  • Print

Ingredients:

  • 2-4-6-8 potatoes, washed and any spots cut out (however many you want to cook and your slow cooker will hold!)
  • Anything you wish to stuff them with

Directions:

  1. Pierce the potatoes with a fork. Place them in the bowl of a large slow cooker. Cover and cook on low 6-8 hours (depending on the size of your potatoes).

      It’s so funny that I hadn’t heard of this. I thought I was the only one but lots of people are saying the same thing! So easy and no water or anything, just potatoes.

      I use mine ALL the time. It’s great for soups, roasts, and keeping large amounts of food warm for parties. If you are going to be leaving it all day you may wish to invest in a programmable one that can turn itself down so that the meat or veggies don’t overcook and get mushy.
