Salad Bar – Lunches for the Summer


Salad Bar

It’s summer vacation in our house. I am still trying to get the kids to eat more fruits and vegetables during the day so I came up with an idea yesterday to make a salad bar every day for the kids. I can prep the vegetables ahead of time and just mix the items up every day so they don’t get bored and they are trying a variety of items!

Our salad bar yesterday consisted of:

  • mixed baby greens
  • baby spinach
  • cucumbers
  • cottage cheese
  • blue cheese
  • feta cheese
  • grape tomatoes
  • sliced mushrooms
  • pea pods
  • onions
  • diced red peppers
  • cold cuts
  • Craisins
  • Triscuits

Each of the kids ate a heaping plate of salad for lunch.  Tomorrow I will mix it up with green peppers, watermelon, kale and pecans substituted for some of the other items. I hope to continue this through the summer at lunch to help expand our eating of vegetables.

I will need lots of ideas. What would be on your salad bar?

  2. Great salad bar spread…we use a lot of nuts,seeds,black olives and cheese too:))

  3. You’re putting some really yummy fruits and veggies on the menu!

    I’d add raisins, peach, plum, apricot, watermelon, cantaloupe, and honeydew slices, strawberries, walnuts, almonds, pickles-all types! 🙂

    Excellent idea! Try roasting broccoli or cauliflower the night before and adding them to your buffet.
