I have an onion hating daughter who when I told her she would love this was adamant that she would NOT like this and didn’t know why I was making this. I kept telling her she would. Needless to say when we had dinner tonight she was asking for more. Her brother looked at her and said, “You realize you are actually asking for more onions don’t you?” Yes. We all had to give her a good bit of ribbing over this.
Verdict:
This has the tart taste of the balsamic vinegar with a hint salty bacon flavor and a bit of sweetness from the onions themselves. We all loved this and could eat it plain with a just a fork.
I served this over bacon stuffed cheeseburgers but this would also be delicious on a toasted baguette for a different appetizer or even on a cheese platter to complement some of your cheeses.
Bacon Balsamic Onion Jam
Ingredients:
- 1/2 lb bacon (if making burgers cook 1 lb. bacon)
- 2-3 large sweet onion, halved and thinly sliced
- Kosher salt and freshly ground black pepper
- 2/3 cup balsamic vinegar
- 1 teaspoon whole grain mustard
- 1/3 cup water
Burgers (if desired):
- 1 1/2 pounds ground beef
- 2 tsp Worcestershire sauce
- 1 tsp freshly ground black pepper
- 4 hamburger buns, split
- Sharp Cheddar Cheese, for burgers
Directions:
- To make the onions: Heat a large saute pan over medium heat. Add the bacon and cook, until browned and crispy. Remove the bacon from the pan and let it drain on a paper towel-lined plate.
- Drain off all but 7-8 tablespoons of the bacon grease and then stir in the onions, about a pinch of salt and pepper. Reduce heat to low letting the onions cook slowly until they are well browned but not burnt. Do not cook too quickly or they will not be as sweet. After about 15-20 minutes of cooking scrape the bits off of the bottom of the pan with a spatula or wooden spoon. If onions are not browned enough let them cook until they are golden brown and wilted
- After the onions have cooked stir in the balsamic vinegar, mustard, water and 8 pieces of the cooked bacon, crumbled into small pieces. Then bring the mixture to a simmer. Simmer until the sauce thickens and is almost completely absorbed, about 3-5 minutes or longer if necessary. At this point, taste and adjust spices to your liking. Add salt, pepper or a bit more balsamic if needed. The topping can then be covered and removed from heat. If not using immediately cool and store covered in a container in the refrigerator.
- If making the burgers, while onions are cooking, use your hands to lightly mix the remaining bacon, crumbled with the ground beef, Worcestershire sauce, salt, and ground pepper in a bowl until the ingredients are well mixed.
- Shape the burger mixture into four equal-sized patties, about 1/2 inch thick, slightly thinner at the center than the edges. Cook the burgers on a grill pre-heated to medium, about 4-5 minutes per side. Add cheese if desired once burgers are cooked.
- Once burgers have finished cooking let them rest for 5 minutes before adding the topping, placing on the buns, and serving.

I have seen recipes for this in the last couple of years in canning and freezing special magazines. I have been tempted to make this but wasn’t sure if I would like it. This is usually put up in 1/4 pint jelly jars. Maybe I will muster up some nerve now to try this.

I occasionally make onion jam or a fennel and onion dish my husband won’t go near. More for me! But maybe he’d eat this. Sounds delicious!

Thank you! The onion is almost unrecognizable between the bacon and balsamic. It is very sweet from caramelizing too which helps my daughter.
