Our lives have been so busy that I marked Saturday and Monday on our calendar as “Do NOT schedule anything.” of course that did not completely work but it kept us down to a sane three or four items in the day and not have it jam-packed.
As we were at the grocery store picking up cornstarch and chili sauce for the Sesame-Ginger Chicken I had planned for dinner I kept thinking about all the people we saw down by the beach earlier grilling, playing volleyball, and just enjoying their time together in the sand. I knew we would be having a late dinner and wouldn’t be able to make it to the beach in time to eat before it got too cold but we could have an impromptu picnic in the living room.
So we bought hot dogs, rolls, corn, three bean salad, chips, potato salad and I made pasta salad. We sat around the coffee table, ate, and laughed. Sometimes these simple meals mean the most. After dinner we went out for ice cream and went down to the lake to watch the sunset. It was beautiful. We all loved the colors and peacefulness of the water. It was a perfect ending to the weekend.
We haven’t done something like this in quite a while. Maybe it is time to do it a bit more often…. What is something you haven’t done in lately that you may need to do again?
