Chili Cheeseburgers

Someone said to me the other day that May and June are made to break parents. I believe it after the last six weeks. The last day of school is today but my son starts summer school tomorrow. Yes, they have Saturday school for two of the six weeks they have summer school. He is taking his high school physical education and health classes this summer to free up time in his schedule in high school. This will allow him to take the extra classes that he really wants to take but he will have to go to school from 8:00 am to 1:00 pm for the next six weeks. I am hoping that summer school will not be quite as rigorous with concerts, presentations, and portfolios as the last six weeks have been.

So, some of our summer fun will be closer to home for a while. We have a few long weekends planned but most of the fun will be closer to home for the beginning of summer.

We are still craving comfort foods even though the temperatures are finally starting to rise. The temperature of the lake has not risen enough for us to swim in yet because it has been far too cold since April to warm the lake enough. Hopefully the 90 degree days that are supposed to come next week will warm the water enough for us to get summer started!

Verdict:

These were messy and delicious! We ended up using knives and forks at the end to sop up all the chili with the toasted buns but we were all laughing and having fun. This was just a fun meal. We laughed and talked all the way through.

Next time you make chili add a few extra cups and freeze it to make some Chili Cheeseburgers fresh from the grill!

Serve the cheeseburgers with a green side salad and vegetable to complete the meal.

Chili Cheeseburgers

  • Difficulty: easy

Ingredients:

  • 1 1/2 lbs. ground beef
  • 2 eggs
  • 1/2 cup bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons Worcestershire sauce
  • black pepper
  • 1 – 2 cups prepared chili (or canned)
  • 4 oz. cheddar cheese, thinly sliced
  • crispy fried onion (if desired)
  • 8 toasted hamburger rolls,  (I used potato rolls)

Directions:

  1. In a large bowl mix together ground beef,  eggs, bread crumbs, garlic powder, onion powder, Worcestershire sauce, and black pepper until just blended. Form ground beef mixture into 8 equal sized patties.
  2. While grilling or frying the hamburger patties, heat the chili in a saucepan over medium heat and toast the hamburger rolls.
  3. When patties are done place hamburger on a toasted roll. Cover with cheddar cheese and chili and serve hot.

  2. These burgers look really yummy, Marci. Summer school sounds awful. I think kids work really hard at school these days so they need to rest during their breaks. WE don’t have such a long break though.

      Thank you! I love vacations with my kids! The summer school was his choice because they have so many classes that they need to take to graduate high school that it leaves little time for them to take the classes they really want to take like orchestra, extra languages, extra art or extra core classes. I understood why he chose it. My daughter was fine not doing it.
