Food Trends for 2018 – United States

As we move into January I have been researching where professionals see the food trends turning for 2018. Some of the trends are carrying over from 2017 and some are possibly new things we may see. These seem to be the things that most trend followers seem to see for the next year in the US:

  1. Comfort Food – This is a carryover trend from last year. As people were on edge from the state of the world – think whose button is bigger? – people turned to comfort foods from their past to ease their stress. Lots of roasts, meatloaf, and stews will be on menus and on dinner tables for the foreseeable future. Just last week I wrote about hygge (HUE-gah) in the Midwest (click for link to blog post) this seems to tie right into that.
  2. Making your food look great. It doesn’t matter if you are eating at home or at a restaurant more people than ever are posting food pictures to Instagram. Making sure your picture is perfect with that bright pop of color from fresh vegetables, edible flowers, or bright fruits is the one thing all amateur food photographers are aiming for.
  3. Mideastern Cuisine will possibly be more popular as the year moves on according to Whole Foods. As people are searching for the next big trend watch Greek, Israeli, and Turkish food to move to the front. Comforting spices and textures will help fuel this trend.
  4. Bowls will continue to be popular this year. Food and Drink is predicting this holdover trend to last throughout 2018. The move to adding grains to salads will be popular in many restaurants. There could even be more restaurants popping up that specialize in bowls and grain salads this year.
  5. Vegetables will be at the top of the food chain. restaurateur Bobby Flay predicts a move to more vegetarian based dishes in restaurants and on the tables in homes. People are more becoming more conscious of where their food is coming from and the more flavor packed meals we can serve the less meat will be served. This is also part of the food as medicine trend. What can cure a headache or be an anti inflammation food? We should all know by the end of 2018.

So, what do you think of these trends for 2018? Any interest you or do you think they are way off base? I love the idea of all of them. I am a comfort food girl but I am beginning to like vegetables and the prettier and spicier it is the more I will like it!

I have always been a vegetable avoider for the most part but over the course of the last few years of writing this blog and getting my kids to be fearless tasters I have found I like them more and more!

  3. I have noticed some little shops popping up in our city where all they serve are salad bowls and fruit items. A healthier choice for fast food options. When it’s hot here in the city those lighter dishes are easier to handle, it gets super hot in Phoenix. I will never stop loving those comfort foods and Mac-n-cheese is at the top of that list. As long as we don’t end up eating Jetson food (little pills from a vending machine) It’s all good to me.

Yeah, I don’t think the little pill food will catch on any time soon. At least, I hope!

  7. I’m glad not to see quinoa or kale on the list, was getting overly tired of their popularity, lol! Comfort food is certainly on my list!

I live quinoa. Kale not so much. I have had it prepared well and it was good but I can never seem to get it right. It is either tough and chewy or soft and slimy. Nothing in between. A pan of Mac and cheese is always good in my book!

We have lots of Turkish restaurants over here. Their specialties are great and I would recommend that trend in the States.
