Slow Cooker Chicken Enchilada Verde Casserole

As we head into the end of the month everything feels like it is just on the edge of spinning out of control. I am busy. The kids are busy. I feel like one more thing is going to put me over the edge. But, I am still trying to make dinner as many nights as possible and have us eat together at least most nights.


This was super simple.  This dish was so easy to make that my son looked at me after I told him how to make it he said, “Are you sure this is all there is to it?” The tortillas were supposed to be stirred into the casserole before serving but my son just put them over the top. It worked.  Everyone had two bowls so I think it was a hit.

Slow Cooker Enchilada Verde Casserole

  • Servings: 6-8

Super simple dish that is flavorful and hearty.


  • 1 1/2 lbs. chicken breasts
  • 1 can (28 ounce) Enchilada Verde Sauce
  • 10 corn or flour tortillas, cut into strips
  • 3 cups grated cheddar cheese (divided)
  • sour cream for topping if desired


  1. Place chicken breasts and enchilada sauce in slow cooker. Cook on low for 7-8 hours until chicken shreds easily.
  2. 15 minutes before serving mix tortillas into shredded chicken and sauce. Add 2 cups of cheese to dish and stir well.
  3. Serve with extra cheddar over top and sour cream, if desired.

  3. Sounds yummy, and I think it would adapt to the Instant Pot really well an cut the time by hours. I’m really enjoying this kitchen tool, and am using it quite a bit. Printing this recipe now!
