Simple Slow Cooker Chicken Stroganoff

We are menu planning for a week or so at a time right now which works for me. I had been doing a month at a time for years but as things change in our life I need to adjust and let it go. My daughter was free so I asked her to put this on for dinner while I was out running errands.

I love these times when the kids make dinner and when everyone is saying how delicious dinner is they are telling everyone how easy it was to make! If an 18 year-old is saying, “It was so simple to make,” then you know it really is easy. She used canned soup and Lipton Onion Soup Mix but you can easily make substitutions for both of these things. We are going for the quick and easy right now so we used the canned ingredients this time.

Verdict:

This was a hit! Everyone just kept saying how good it was. It was super simple and tasty? This is going on the menu again. I love dishes like this that the kids can easily make and they like to eat!

Serve this with a green vegetable and salad and you have a complete meal.

Simple Slow Cooker Chicken Stroganoff

Simple Slow Cooker Stroganoff that is creamy and almost ready to eat when you get home.

Ingredients:

  • 2 lbs. chicken breast
  • 1 (10.75 oz) can cream of chicken soup
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 packet dried onion soup mix
  • 1 (8 oz) container fresh sliced mushrooms
  • 1 cup sour cream
  • egg noodles, pasta, or mashed potatoes for serving, if desired
  • salt and black pepper, to taste

Directions:

  1. Add chicken breasts, soup, and soup mix to the slow cooker. Stir together and cook on low for 6-7 hours until chicken is cooked through.
  2. Remove chicken to a plate and cut into pieces or shred once cooked through. Add mushrooms to sauce and return chicken to slow cooker. Stir well and warm for about 15-20 minutes until mushrooms and chicken are heated through.
  3.  Add sour cream and stir until it dissolves completely into the sauce. Taste and adjust thickness by adding a bit of milk or additional sour cream if needed and salt and pepper to taste.
  4. Serve over egg noodles if desired.
