Southwest Slow Cooker Chicken Stew


Temperatures for Wednesday are predicted to be -10 to -15 without windchill and about -40 with windchill warming soup and bread sound really good to me. This is one of our favorite soups. You can add bits and pieces of whatever you have left in your vegetable drawer – diced pepper, sliced carrots, or celery. Use those veggies up before they go bad!

Verdict:

This is such a nice warming soup. We add a little bit of curry powder to the dish to ramp up the flavor and give it that extra hit of flavor. If you don’t like the flavor of curry just leave it out and maybe add more of the other spices you do like. Taste it and adjust it to your liking! Remember these are just ideas take them and make them your own,

I served this with a sprinkling of cheddar cheese and tortilla chips on the side to scoop the chunky pieces with.

Southwest Slow Cooker Chicken Stew

  • Servings: 6-8

A substantial stew with a warm spicy flavor.

Ingredients:

  • 1 1/2 lbs. chicken breast
  • 1 (16 oz) can corn, drained
  • 1 (16 oz) can black beans, rinsed and drained
  • 1 (28 oz) can diced tomatoes
  • 1 (16 oz) tomato sauce or puree
  • 1 small onion, diced
  • veggies of your choice – diced peppers, sliced carrots, sliced celery, etc…
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1/2 teaspoon Cayenne pepper
  • 1/2 teaspoon+ crushed red pepper
  • couple pinches of curry powder, if desired
  • hot sauce, sour cream, tortilla chips for serving if desired

Directions:

  1. Mix all ingredients in bowl of slow cooker. Cook on low 6-8 hours until chicken is cooked through. Remove chicken and dice or shred (your preference). Return chicken to slow cooker and stir well. Taste soup and adjust spices to your liking.

  1. OMG! This sounds amazing and ZERO POINTS before toppings! In fact, if you use fat free cheddar and replace the sour cream with fat-free, plain, Greek yogurt, you STILL have ZERO POINTS!!! I can’t wait to make this one!!!
