
One of the things we like to do, other than grilling in the summer, is have appetizers and a drink before dinner. Sitting out with a glass of wine or sangria and a few simple bites can almost be a complete meal on those super warm nights. This is a simple bite that is one quite a few plates at local restaurants but we kicked it up a bit by making candied walnuts and a a drizzle of honey or really good balsamic reduction over the top.
Verdict:
These do not last long once they are out on the table. The hardest part of making them may be slicing the bread for the crostini. I know that Wegman’s used to sell baguettes pre-sliced for crostini but we don’t have that here so I did it by hand.
The rest of the dish takes about 10-12 minutes to put together once the bread is cut.
Crostini with Goat Cheese and Toasted Walnuts
A simple yet delicious appetizer for any gathering.
Ingredients:
- 1 (1 lb) crusty baguette
- 3 tablespoons extra virgin olive oil
- 6 oz. walnut pieces
- 4 tablespoon butter
- 1/4 cup brown sugar
- 5 ounces goat cheese, softened to room temperature
- Honey for drizzling (I used a few tablespoons)
Directions:
- Preheat an oven to 350 degrees.
- Slice the baguette into thin rounds and arrange on a baking sheet. Use a pastry brush to lightly coat both sides of each piece with olive oil.
- Cook the baguette slices in the oven flipping over half way through until well toasted.
- Remove the baguette slices after 15-20 minutes, or when browned.
- While the baguette is cooking prepare the walnuts in a fry pan. Melt butter in the bottom and nuts and toast gently. When nuts are fragrant and toasted add brown sugar to the pan and stir constantly until nuts are lightly caramalized. Remove pan from heat.
- Allow the crostini to rest until cool to the touch. Spread a thin layer of goat cheese over the top of each crostini, then top with walnuts and a drizzle of honey. Serve warm.
