Egg and Feta Bites

Another appetizer for dinner night in our house. The heat index is over 100 so we are trying to eat a bit lighter. These are perfect for a savory bite. Using pre-made shells make these super simple to make!

Verdict:

My house was divided on these. My daughter thought they were okay, she wold have preferred more flavor in the bite. My son and wife thought they were great and ate all of them! Depending on what you like you can add additional garlic or powdered garlic to taste.

Egg and Feta Bites

A simple appetizer for a party or light dinner.

Ingredients:

  • 8 oz feta cheese, crumbled
  • 2 eggs
  • 10 oz. spinach, cooked down, dried and finely chopped
  • 2/3 cup Parmesan cheese, freshly shredded
  • 2 cloves garlic, finely minced
  • 1 teaspoon dried oregano
  • salt and black pepper, to taste
  • phyllo shells, if frozen thawed

Directions:

  1. Preheat oven to 400.
  2. Beat eggs, feta, Parmesan cheese, garlic, oregano, salt and black pepper together in a bowl.  Stir in cooled spinach or it will scramble the eggs.
  3. Fill phyllo shells with egg mixture.
  4. Bake 7-9 minutes until tops are browning and centers are set.
  5. Remove pan from oven and allow to rest for 2-3 minutes before serving.
