Grilled Lemon Chicken

Still giving our grill a workout this summer. My kids both LOVE lemon chicken and we have had lots of chicken as it has been on sale at least once a month so we are buying 20-25 pounds at a time. We had a small bunch of asparagus so we grilled that too with butter, olive oil and garlic in an aluminum foil pouch.  I did make the rice indoors with chicken stock and a bit of spices but everything else was cooked on the grill.

Verdict:

My kids loved this. I thought it was just a tad too lemony for my tastes so I may up the soy sauce and cut back on the lemon just a titch next time but over all the chicken had great flavor and was super juicy!

You let this chicken marinate all day or overnight and it is the best way to do it.

Grilled Lemon Chicken

A lemony marinade for chicken that produces a juicy chicken breast.

Ingredients:

  • 1/2 cup fresh lemon juice
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 teaspoons minced garlic
  • 1/2 teaspoon ground powdered ginger
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 to 2 pounds chicken breast pounded down to 1″

Directions:

  1. Mix together lemon juice, soy sauce, olive oil, garlic, ginger, onion powder and red pepper flakes together in a gallon sized Ziploc bag.
  2. Add chicken to marinade and seal bag.
  3. Place bag in fridge and let chicken marinate for several hours or overnight.
  4. Remove chicken from bag and discard marinade.
  5. Place chicken on grill heated to medium-high, cooking 5-6 minutes on each side or until cooked through. Remove chicken from grill.
  6. Serve hot.

        1. When I get a paycheck a store has boasted chickens regularly. It lasts maybe 2 days. Plus a neighbor cat waits Fer the bones and Grissel’s. Today my boasted friend is lemon seasoned in the fridge. With a dark chocolate bar and strawberry milk after all my activities are completed .
