Breakfast Pizza with Hashbrown Crust

We have been having breakfast for dinner quite often lately. Eggs have been on sale from $.45 to $.88 a dozen.  Breakfast sausage was on sale a few weeks ago so I picked up several rolls and cheese has been $1.49 for 8 oz. Perfect! Lots of casseroles and now breakfast pizza.

Verdict:

I have made breakfast pizzas in the past and even made one with a hashbrown crust but this was by far our best attempt ever! The crust was nice and crispy. I highly recommend baking it twice as the recipe calls for to get that nice crispy crust. Both kids thought this was great and were already off and discussing what other toppings they want on the next one.

Ingredients:

  • 30 оz ѕhrеddеd hаѕh browns (if frozen thaw first)
  • 3 tbsp buttеr mеltеd
  • 10 large еggѕ
  • 16 oz. breakfast sausage
  • 1/2 cup onion, finely diced
  • 2 сuрѕ+ sharp cheddar сhееѕе, shredded (I recommend sharp cheddar but I used what I had on hand in the picture – a small bit of cheddar, colby jack, and some Swiss. Use what you have or what you like)
  • Toppings as desired: diced green pepper, diced red pepper, mushrooms, olives, ham, bacon, spinach, etc….)
  • salt аnd black pepper

Directions:

  1. Preheat the oven to 425 degrees.
  2. Form the potatoes on a pizza stone into a crust shape. Brush with melted butter and season well with salt and black pepper
  3. Bаkе аt fоr 20-25 minutes.
  4. While the crust is baking cook the sausage (crumbling into small pieces as it cooks) and scramble the eggs.
  5. Remove the crust from the oven and sprinkle the scrambled eggs over the crust.
  6. Top eggs with breakfast sausage. Then sprinkle the onions over the sausage.
  7. Follow at this point if you wish you can add mushrooms, green pepper, red pepper, or other toppings your family likes.
  8. Shredded cheese should be the top layer.
  9. Bake the pizza again for 20-25 minutes until browned and heated through.
  10. Allow to rest for 5 minutes before cutting and serving.
