Grilled Shrimp and Vegetables

Day 82 – So, are we all tired of making dinner every night yet? I know we are! We are trying to keep things simple, lots of grilling, because it seems the easiest thing to do right now. Let some meat marinate all day and then cook it for dinner. We never really went out to eat very much before but I think because we cannot do it now I miss it more than every. We can do take away or drive thru but still have another week or two before they will consider opening restaurants to dine in. Even then we will still probably wait a few weeks to go. Are you missing dining out?

Verdict: I love these shrimp! They remind me of the grilled lobster tails at “Red Lobster.” I know they are entirely different but the taste reminds me of the lobster, which is my favorite dish from there. It helped with the wanting to dine out cravings.

For the grilled veggies you can choose whatever you like or have on hand! We chose Michigan asparagus, red peppers, mushrooms, and onions. We give the skewered veggies a brush of olive oil and a spinkle of powdered garlic before grilling and they are delicious.

Grilled Shrimp and Vegetables

  • Servings: 6-8

Ingredients:

  • 2 lbs raw shrimp, thawed
  • 3 tablespoons oil
  • 1/3 cup butter, melted
  • 6 garlic cloves, crushed
  • 1/4 cup honey
  • 1/4 cup lime juice, fresh squeeze
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon basil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red pepper flakes

Directions:

  1. In a bowl, whisk together the oil, melted butter, minced garlic, honey and lime juice.
  2. In a separate bowl combine dry ingredients.
  3. Use a paper towel and pat the shrimp dry.
  4. Toss the shrimp in the butter, garlic, and honey.
  5. Sprinkle dry seasonings over the shrimp. Set aside to marinate 10 minutes.
  6. Add shrimp onto grilling skewers.
  7. Grill shrimp for about 2-3 minutes per side, until no longer translucent.

  3. This looks very nice, Marci. I only cook over weekends so I don’t get tired of it. I do like to go out but we can’t, so I haven’t really thought about it. Missing family more than eating out.

      I agree with the missing family. I want to get to see my parents in North Carolina but it is about a 12 hour drive. I hoping for August. Fingers crossed.

    McDonalds have just reopened for Drive Thru here and there are already queues. I’ve been thinking about them during lockdown but over the weeks I seem to have lost the urge to eat junk.

      Unfortunately I have been eating more sweets. Not take out but sweets. Sigh. Back to the real world….
