Mediterranean Inspired Couscous Salad

It seems strange to me to see things starting to get scheduled on our family calendar. I hold the master calendar that we try to keep everyone sorted on and for 2-3 months it has been almost blank. Now this week I see a college interview, a dentist appointment, a dinner, and a small gathering of friends. It almost feels like too much and that is what we used to do in one day not a week.

Dinners are still simple. It has been consistently between 85-95 degrees all week which for Michigan is usually about 2 weeks and then we dip back down into the 70s. Well, we are over two weeks now and they are predicting this will hold for about another 2 weeks. So, easy and grilled it is!

Verdict: This is super simple to make and accompanies the Grilled Chicken with Dill Sauce (click for link to recipe) nicely. It is a refreshing salad that you can make ahead and can make as sweet or lemony as you like!

Mediterranean Inspired Couscous Salad

  • Servings: 6-8

Ingredients:

  • 1 cucumber, medium deseeded and chopped
  • 1/2 cup fresh parsley and dill mix (your choice on how much of each)
  • 1 lemon, zest to taste
  • 1 (5 oz) container grape tomatoes, cut in half
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons lemon juice+, fresh squeezed
  • 1 1/2 cups Israeli couscous, dried
  • salt & black pepper
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup walnuts, toasted
  • 1 cup feta, crumbled

Directions:

  1. Bring a large saucepan of salted water to a boil. Add couscous and cook being careful not to overcook. Drain couscous.
  2. While the couscous is cooking, whisk the oil, mustard, honey, lemon zest, lemon juice, salt, and black pepper together in a bowl. Add the drained couscous to the dressing and mix well.
  3. Stir in the cucumber, tomato, herbs, feta, and walnuts. Taste for seasoning and adjust with salt and/or pepper as needed. Serve warm or refrigerate for later.
