Cheesy Ranch Potatoes in Foil

Dealing with the uncertainty of life is starting to get to everyone in our house. My daughter’s life has been turned upside down several times this week. She had planned on living in a single in her college dorm next year and then got a letter suddenly that she needed to have a roommate and couldn’t have a single because they were reconfiguring the dorms and closing several of them. Oh, and if she couldn’t find a roommate within the week they would assign one to her randomly. So, she scrambled and found a roommate who seems like she will be a good match for my daughter.

Then yesterday she looks at her class schedule online for Fall 2020 and all her courses have been changed to online! UGH! Lots of tears – she doesn’t do well with online classes, why pay $25,000 to live in a dorm and take online classes, and I am going to be 20 years-old and living at home. We finally got her calmed down last night talking about all the different options she has and she gets an email from the school today that they are changing the classes in 4 phases as their online system cannot take all the changes happening at once. So, the schedule they have up is not their final schedule. You would think they would have put that out BEFORE they made all the changes. I just picture people in academic services going into work today and opening up their computers to hundreds of emails and phone calls about the schedules. Oops, we probably should have told them first before we started changing things around.

Needless to say carbs has been the rally cry around our house lately. I thinks we have more types of breads, pasta, and potatoes in our house than we have ever had. They are just those perfect comfort foods we all crave.

Verdict: We love these little foil packets. You can also just sprinkle the ranch seasoning over the potatoes but we like the dressing mixed with the sour cream. It does separate but you can just give it stir and it tastes fine once cooked. You can vary the cheese, leave out the sour cream. Make these into something your family loves. Don’t like ranch try one of the premixed seasonings available at your grocery store. Brown sugar and bacon sounds really good on these.

Cheesy Ranch Potatoes in Foil

  • Servings: 6-8 packets
  • Difficulty: easy

Ingredients:

  • 1 1/2 pounds red skin potatoes – cut into bite size pieces
  • 2 tablespoons olive oil
  • 6 tablespoons butter
  • 1 packet ranch seasoning mix
  • 1 (16 oz) container sour cream
  • 1/4 teaspoon fresh cracked pepper
  • 1 cup+ sharp cheddar cheese – shredded

Directions:

  1. Heat grill to medium heat. Lightly spray 6-8 rectangles of foil with cooking spray. Set aside.
  2. Place potatoes in a large bowl. Drizzle on olive oil. Toss to coat potatoes.
  3. Mix ranch seasoning into sour cream. Place potatoes in center of each of foil rectangles dividing equally. Place 1 tablespoons of butter on the top of each mound of potatoes. Sprinkle pepper over potatoes and then spread a few tablespoons of sour cream mix over the potatoes in each packet.
  4. Fold foil and seal ends. Place on grill seam side down for 10 minutes. Turn pack over and continue to cook for 10 minutes.
  5. Remove packets from grill and carefully open. Sprinkle cheese on top of potatoes and place packet back on grill, closing lid, for 3-4 minutes, until cheese is melted. Top with additional salt and pepper if desired.

  1. This C-19 time is very difficult, Marci, especially for our children who are trying to strike out in life. My older son is writing very important examinations at home and it isn’t easy, especially after on-line learning for the past four months. My younger boy is remedial and isn’t coping with on-line well at all.

      It is so tough on the kids. I can rationalize that this will not last forever and things are going to change but it will be okay. They just cannot see beyond today. It is so difficult for them.

      We are looking at new schools for her now. Trying to get her to see this as an opportunity for change. Such a crazy time here.

    The schools here are slowly laying out a plan for the upcoming school year. A lot of the colleges are starting off remotely with limited on campus in person learning. Everyone seems to be following the hybrid model. Hopefully things will go on the upswing soon and your daughter can enjoy her single dorm room on campus.

      It would be nice. We are looking at other schools right now trying to see if we can get her into somewhere with a hybrid. She got an email today that ALL her classes were going to be online per the psychology department because of their size and content. Why would we pay $25,000 to have her go to a dorm room and take online classes? It doesn’t make sense.
