
We went down to the beach the other night to watch the sunset. My favorite part of the night here is that at sunset they play “Taps” up on the bluff. Everyone stops and goes silent. It is the most amazing thing to see and hear. There are people that come here on vacation and they get it. You will see soldiers saluting and standing at attention and kids watching the sunset as the last notes echo through the area. It makes me tear up every time.

On nights where we are at the beach or bluff for sunset at 9:30 we like to have simple dinners ready to cook when we get home. This is one of those meals. We had the rub made and the vegetable side on skewers to put on the grill when we got home. Yes, we eat late, about 10:00 pm, but we also don’t go to bed until usually after 1:00 am.
Verdict: This was actually a pork chop everyone liked! In our house that is a HUGE deal. My house is a house divided on pork. It has to be flavorful and perfectly cooked or half of my house won’t eat it. I have found a meat thermometer is the perfect grill/cooking accessory. It will let you know when the meat is cooked through and not dried out.

That sunset image with the waves is beautiful, and the close of the day at that beach sounds wonderful. I would tear up too I’m sure since I do when hearing or singing the National Anthem.
