Blackened Fish Sandwiches

My entire family has had a case of the blahs lately. No one wants to do anything. Cooking, cleaning, etc… are a chore right now. Usually they are a chore but for some reason right now it just seems worse. We are actually thinking about making a quick getaway with the family for a few days before school starts. We haven’t been away as a family in quite awhile and we really feel we need to get away. We shall see if it works out but right now we are all looking forward to being somewhere else for a couple days. Have you traveled since March as a family?

We are trying to save money and eat from our farm share and our freezer and pantry. So a 1 lb. bag of cod became blacked fish sandwiches with Siracha mayo for dinner.

Verdict: Every time I serve fish I wonder why we don’t eat more of it. We love it every time we have it. I think in my head it is much harder to cook than it really is. This recipe is so simple and dinner is ready in no time! We served this with a green salad, Parmesan zucchini slices, and cottage cheese to complete our meal.

Blackened Fish Sandwiches

Ingredients:

  • 1 lb cod, dried well with paper towels
  • 1 tablespoon butter, melted
  • 3 tablespoon paprika
  • 1 teaspoon salt
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1 teaspoon cayenne pepper to taste
  • 4 brioche rolls
  • 1/4 cup mayo
  • Siracha sauce

Directions:

  1. Mix paprika, salt, onion powder, black pepper, thyme, oregano, and garlic powder in a small bowl until well blended.
  2. Brush cod with melted butter. Sprinkle well with spices mixture until completely covered on both sides.
  3. Mix mayo and Siracha sauce to taste. Refrigerate until needed.
  4. Oil grill well before placing fish on grill or it will stick! Flip 1/2 way through cooking. Fish is done when opaque.
  5. Remove fish from grill and toast rolls on grill.
  6. Top rolls with Siracha mayo and fish plus any toppings you like.
  7. Serve hot.
