
We got to see my son’s senior pictures. Senior pictures. It seems impossible. I swear I am no more than 28-29 years old. Just don’t ask me to stand up quickly or every joint in my body will creak and pop. I am going to savor every moment of this year and not be sad. This is a great thing for all of us.
But, for now dinners are still simple and as always I want to pack the most flavor into a dish I can. One of our go-tos is a balsamic vinegar reduction. It pairs perfectly wih the ravioli to make it a bit different and seem like a really elegant meal when it is super simple!
Verdict: Trust me on the toasted walnuts. It sounds weird and my family kind of gave me the side-eye as I served it to them but it was so good! Add a few leaves of torn basil and some halved grape tomatoes to the top of this dish and it almost looks like a restaurant meal.
I served this with a green side salad to complete the meal.
