Shepherd’s Pie in the United States is usually made with ground beef. A variation on the Cottage Pie from the United Kingdom that is usually ground lamb. Sometimes you will see both meat combined in the US. This dish began appearing in American cookbooks in the 1920s. This recipe uses packaged gravy mix but you can make your own gravy or use your favorite jarred gravy. Also, this is a great use for leftover mashed potatoes.
Verdict: My son said he could tell I grew up in a German Lutheran family because of all the casseroles we are eating lately. Comfort food. Dishes from the past updated for today.
1 1/2 lbs. lean ground beef (or 50/50 blend of ground beef and ground pork)
1 (16 oz) bag frozen mixed vegetables, thawed
2 packets dried beef gravy mix (you can also make your own gravy from the drippings from the beef)
1 1/2 cups water
2 lbs. potatoes, peeled and cooked to softened (great for leftovers just warm before adding butter and cream cheese)
4 oz. cream cheese
1/4 cup butter
1/4 cup 1/2 and 1/2 (I used fat-free)
1 teaspoon garlic powder
salt and black pepper, to taste
1 cup French fried onions
Directions:
Heat oven to 375 degrees. Spray a 13 x 9 pan with non-stick spray.
Brown meat in large skillet; drain. Return meat to skillet. Add mixed vegetables, gravy mix, and water to pan. Stir well and return to a simmer. Once the gravy has thickened pour into prepared pan.
Mix cooked potatoes, cream cheese, garlic and 1/2 and 1/2 until smooth. Spoon potato mixture over meat mixture.
Bake 20 min. or until heated through. Remove pan from oven and sprinkle with fried onions. Return pan to oven for 5 minutes.
Remove pan and allow to rest for 3-5 minutes before serving.

Lamb is hard to find here unless it is Easter. I will need to find some to try. I usually mix pork in if I don’t have enough ground beef.
