Slow Cooker Cranberry Pork Loin

I usually leave writing this introduction to the recipe until the very end just before I am ready to publish the recipe. I am never quite sure what I am going to write about until I start writing. My kids, the weather, life, or whatever happens to be on the news may make it into my introduction.

Today it is KFC Fire Logs. What does this have to do with pork loin? Absolutely nothing other than I was laying in bed last night reading it and thought it was a joke until they said that if you want one you have to get them when they go on sale because they have sold out the last two years. Anyone ever had one? I don’t know if I would like the smell. I love chicken but chicken fire?

Verdict: We really love this pork loin. It is super simple to make and we prefer it over mashed potatoes but you could just as easily serve it over rice or egg noodles. Totally up to you. Now that cranberry sauce will be on sale in the coming month for Thanksgiving grab an extra few cans to make this one night.

I served this with mashed potatoes, carrots, and a green side salad.

Slow Cooker Cranberry Pork Loin

  • Servings: 8-12
  • Difficulty: easy

Ingredients:

  • 3 lb. pork loin
  • 2 (14 oz) cans Cranberry Sauce, whole berry not jelly
  • 1 packet of dry onion soup mix
  • 1/4cCup of butter melted

Directions:

  1. Place pork loin in the slow cooker and pour the melted butter over it. Mix the dry onion mix and one can of cranberry sauce together and pour over the meat.
  2. Cook on low for 6-7 hours or until the pork loin is cooked.
  3. Once done, shred your loin and let it sit in the gravy. Mix the second can of cranberry sauce with about 1/2 – 3/4 cup of liquid from the slow Spoon over the pork when served.
