Sesame Chicken

I am fighting my anxiety over the coming weeks (election, Covid-19 spikes, flu, the holidays,…) by remembering what I am thankful for so much. This past weekend my daughter feised (Irish dance competition) in Pittsburgh, Pennsylvania. This is only the second feis in the past 8 months she has danced in. For a girl that is used to competing 2-4 times a month this was HUGE! She has learned new dance steps in the past month so she was not expecting to do well but she placed 3rd and 4th so she was happy. On the way home she was able to stop at a college she is thinking about attending for a short tour and meeting. These little things made all of us feel like things were almost normal like pre-Covid-19. Things may look very different than we are used to but the feeling of just doing these things is refreshing!

Verdict: Sesame Chicken is my daughters favorite meal from our local Chinese restaurant. I know she is either going to order than or orange chicken 90% of the time. This is a simple recipe that can give you the flavor of the sesame chicken without having to order out!

I served this with steamed broccoli and carrots on the side to complete the meal.

Sesame Chicken

  • Servings: 4-6

Ingredients:

  • 1/2 cup soy sauce
  • 1/2 cup rice vinegar
  • 1 cup brown sugar
  • 2 tablespoon corn starch
  • 2/3 cup water
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds

Tempura Batter:

  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 2 egg whites
  • 1/2 cup cold seltzer water

Chicken:

  • 1 1/2 – 2 lbs. chicken breasts, cut into 1″ pieces
  • 1 tablespoon plus 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper
  • 2-3 garlic cloves, minced
  • vegetable oil for deep frying

Directions:

  1. Mix together the soy sauce, vinegar, brown sugar, corn starch, and sesame oil together until well blended. Set aside. Prepare the batter by mixing corn starch, flour, egg whites, and seltzer until just mixed.
  2. Heat a pan (with high sides) of 2-3″ of oil on the stove top over medium heat. Add the chicken to the batter and coat well. Carefully add the chicken to the oil in batches frying until golden brown.
  3. In a large wok or skillet add the sesame oil to the frying pan and add the garlic and red pepper flakes and cook for 30 seconds.
  4. Add in the sauce and the chicken and coat it will slightly thicken and serve immediately over rice, garnished with sesame seeds.
