Simple Sour Cream Chicken

This meal started out as an accident. I wasn’t feeling well and I kept telling my family I wanted to make a Cream Cheese Chicken with Mushrooms. They thought I was saying sour cream chicken. So, they made a sour cream chicken similar to what I was thinking but not quite. Notice no mushrooms or cream cheese.

Verdict: This was very good. Simple tasting and simple to make it was perfect for what we needed. Even with me not feeling quite right this was comforting and filling.

I put our chicken over Basmati rice with sliced carrots as a side.

Simple Sour Cream Chicken

  • Servings: 4-6 large servings

Ingredients:

  • 1 1/2 – 2 lbs. chicken breast
  • 1 cup mozzarella
  • 1 cup sour cream
  • 2 teaspoon dried oregano
  • 3/4 cup Parmesan cheese, grated
  • 1 1/2 teaspoon dried basil
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Parsley chopped, for garnish
  • rice for serving, if desired

Directions:

  1. Preheat your oven to 375. Lightly coat a 9×13 baking dish or casserole dish with non-stick spray or butter.
  2. Mix together sour cream with a 1/2 cup of Parmesan, oregano, basil, garlic powder, salt and pepper.
  3. Lay your chicken breasts in baking dish, top each with mozzarella cheese. Spread the sour cream mixture over the chicken in the casserole dish
  4. Top with remaining Parmesan. Cook for 1 hour or until cooked through.
  5. Serve over rice with parsley garnish as desired.
