Italian Sausage Crostini

When we are doing our big cook for holidays we like to have little bites instead of one big meal. This allows us to snack as we go rather than sitting down to a meal all at once. We had a package of Italian sausage in the freezer that we wanted to use and weren’t really feeling making spaghetti while we were making macaroni and cheese; stuffing; turkey; and apple kuchen for Christmas Eve and Christmas Day. We had a baguette so Italian sausage bites were made.

Verdict: These little bites eat like mini sandwiches. They are filling and remind me of little pizza bites if you spice your sauce up. If you like your sausage extra spicy add an extra pinch of red pepper to your sauce. Not care for spicy? Make them with mild Italian sausage and doctor up your favorite marinara with dried basil, powdered garlic, and oregano for extra flavor! Yum!

Italian Sausage Crostini

  • Servings: 25 -28 pieces

Ingredients:  

  • 1 large long French baguette cut into 1/2 inch slices on the bias
  • 1 pound spicy Italian sausage
  • 1 cup+ marinara sauce, use your favorite sauce
  • 1 cup Mozzarella cheese, shredded
  • 1/4 Parmesan cheese, freshly grated
  • Basil, fresh for garnish, if desired

Directions: 

  1. Preheat oven to 350 degrees.
  2. Place bread slices on a large baking sheet, set aside. Toast bread in oven for 3-5 minutes until brown and crispy. Remove from oven and set aside.
  3. Add sausage to a large skillet. Cook over medium heat until browned. Drain off excess fat.
  4. Stir sauce into meat. Adjust amount of sauce used based on personal preference for more or less saucy.
  5. Spoon a small amount of meat mixture onto each bread slice. Sprinkle with cheese.
  6. Turn oven up to broil. Place crostini under broiler for 1-2 minutes until cheese has melted and light brown on edges.
  7. Sprinkle with basil and additional Parmesan cheese if desired. Serve hot.
