When we are doing our big cook for holidays we like to have little bites instead of one big meal. This allows us to snack as we go rather than sitting down to a meal all at once. We had a package of Italian sausage in the freezer that we wanted to use and weren’t really feeling making spaghetti while we were making macaroni and cheese; stuffing; turkey; and apple kuchen for Christmas Eve and Christmas Day. We had a baguette so Italian sausage bites were made.
Verdict: These little bites eat like mini sandwiches. They are filling and remind me of little pizza bites if you spice your sauce up. If you like your sausage extra spicy add an extra pinch of red pepper to your sauce. Not care for spicy? Make them with mild Italian sausage and doctor up your favorite marinara with dried basil, powdered garlic, and oregano for extra flavor! Yum!
