The Summer of …

Last year was the Summer of Grilling for us. We grilled everything and anything we could. Ordinary chicken, steaks, and fish to the extraordinary turkey and whole ham. It was fun for us and made us really be creative in what we were having and we found we will only grill a turkey from now on. So much flavor and juicy turkey. YUM!

We have been thinking about what this summer will be. What did we want to focus on? We have decided to make this the year of dining al fresco (eating outside). Salads, party foods, finger foods, sandwiches and things that may not need to be kept refrigerated for a time. Or how do we keep things cold for parties. I have tons of ideas I cannot wait to try! I am so excited for summer this year as I am hoping we will be able to spend more time outside and in the fresh air! I don’t think I have ever been so excited for May, June, July, and August. We are planning our gardens – flower, vegetables, and herbs. Since the time change it is already light until almost 8:00 pm. We cannot wait for the 9:30 pm nights. Maybe down at the beach.

    I am looking forward to your summer recipes, Marc! My favorite summer dish is a simple Swiss sausage and cheese salad with rolls.

      That sounds amazing! Cheese salad? I must know more about this!

        Hehe, really? It is approx. half cheese (I use Swiss cheese like Gruyère or any cheese that taste stronger and spicy) and half sausage like knockwurst (if that is the translation). Or which ratio you prefer it. Then I add chopped onions, and chopped gherkins. The dressing is kind of a French dressing (vinegar, mayonnaise, rhaps or sunflower oil, herbal salt, pepper, and garlic). The buns we are eating are any kind of Swiss buns (crispy on the outside). They may not be available in the US. Basically you can use any buns or rolls or toast.
        That was it in a nutshell. It is really simple and quickly made. I love it for dinner on the patio on a warm summer evening.

  5. I like to make shish kabobs and grill chicken/steak. Grilled foods healthier and I can cut up leftovers for salads, soups, and scrambles.
