Garlic Penne Pasta with Chicken: Revisited

This past year hit me quite a bit harder than I ever thought is would. There were great things like my partner and I growing closer when it was just the two of us. We could remember what we really liked about being together and just have fun together. And there were not so good things. My son took this year especially hard. The first two quarters were fine even though he wasn’t going to classes he maintained a 3.3 average. But, the not going to class, depression, and Autism tendencies kicked him in the final quarter. So, he is now taking a year off to learn to better function as a student.

Basically, I am homeschooling him over the next year in life skills and how to do things that most “normal” college students already know. It is good and framing it as homeschooling is helping both of us.

So, I decided to try and pick up the blog again to be “normal.” We are back to eating full meals with the three of us. Although I am trying to keep my meals simpler during the week and do the bigger meals only on the weekend.

Verdict: Simple and flavorful this easy to make dish is a weekday favorite for us. It takes about 30 minutes once all your ingredients are prepped. We try to prep on Sunday for the rest of the week. You can shred your Parmesan cheese and cut all your chicken for the week on your prep day. This dish may be a family hit for you!

Garlic Penne Pasta with Chicken

Ingredients:

  • 16 ounces Penne pasta
  • 2 tablespoons olive oil
  • 1 1/2-2 pounds chicken breast cut into small pieces
  • 5-7 cloves garlic, minced
  • 1/4 cup flour
  • 3 tablespoons butter
  • 2 cups half and half
  • 1 cup chicken stock
  • 1 teaspoon Italian seasoning (mixture oregano, basil, marjoram, thyme)
  • 1 cup Parmesan cheese, divided
  • parsley for garnish, if desired
  • Olive oil
  • Salt and pepper

Directions:

  1. In a large, deep skillet, heat olive oil. Add chicken and season with salt and pepper. Cook until chicken is no longer pink, about 5 minutes. Transfer to a plate and set aside with the pasta.
  2. While chicken is cooking put a large pot of water on to boil. As you start the sauce you can start cooking the pasta according to package directions. Drain pasta well when done cooking.
  3. Add 3 tablespoons of butter to the skillet you cooked the chicken in and melt. Stir in garlic and cook for about 1 minute. Stir in flour and Italian seasonings cook for about 1 minute or until golden brown. Stir in milk and chicken stock and simmer for several minutes until thickened. Remove from heat and stir in half of the Parmesan cheese until melted. Stir up any browned bits at the bottom of your pan as you are stirring in the Parmesan cheese.
  4. Toss the cooked pasta and chicken with the sauce to coat, then stir in remaining Parmesan cheese and top with parsley, if desired. Taste and adjust spices to your liking.
  5. Serve warm topped with extra Parmesan cheese if desired.

  5. Great to read your writing again! I took what I thought was a few weeks off from my blog last December. After starting a new job in person and my daughter returning to school in person, I still have not started it back up! We were both home, working and learning, for more than two years!
