Homemade Waffles

This recipe is highly adapted from the Waffles I recipe at Allrecipes.com.  I used our Cinderella Waffle Maker so the pockets were not as deep and fluffy as could be but the flavor was very nice.

Ingredients

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Directions

  1. Pre-heat waffle iron.
  2. Beat eggs in large bowl with a mixer until fluffy.
  3. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla to light and fluffy.
  4. Butter the waffle iron to avoid sticking.
  5. Pour mix onto hot waffle iron. Cook until golden brown.

My kids loved this recipe.  I was able to make a similar recipe for my son using Gluten-Free Bisquick as a base.  Of course it helped that the other side of the waffle was Cinderella and Prince Charming in their carriage.
