This recipe is highly adapted from the Waffles I recipe at Allrecipes.com. I used our Cinderella Waffle Maker so the pockets were not as deep and fluffy as could be but the flavor was very nice.
Ingredients
- 2 eggs
- 2 cups all-purpose flour
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 1/4 cup sugar
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Directions
- Pre-heat waffle iron.
- Beat eggs in large bowl with a mixer until fluffy.
- Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla to light and fluffy.
- Butter the waffle iron to avoid sticking.
- Pour mix onto hot waffle iron. Cook until golden brown.
My kids loved this recipe. I was able to make a similar recipe for my son using Gluten-Free Bisquick as a base. Of course it helped that the other side of the waffle was Cinderella and Prince Charming in their carriage.
