I had half a loaf of Italian Bread leftover from last night’s dinner that I needed to use before it turned stale so I found a recipe for French Toast Casserole on-line that looked good.
I started with this recipe for French Toast Casserole and then modified it according to the suggestions in the comments section and my own families tastes.
Ingredients
- 5 cups bread cubes
- 4 eggs
- 1 1/2 cups half and half
- 1/4 cup white sugar, divided
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup plus 1 tablespoon margarine, softened
- 2 teaspoon ground cinnamon, divided
Directions
- Pre heat oven to 350 degrees F. Melt 1/4 cup of butter and pour it into the bottom of an 8×8 pan.
- In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt, 1 tsp. cinnamon and vanilla. Gently add bread to egg mixture in three batches stirring gently until all bread is coated. Pour mixture into pan. Dot with margarine; let stand for 10 minutes.
- Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top. Bake in preheated oven about 45 to 50 minutes, until top is golden.
- Serve with a bit of butter and maple syrup drizzle over the top.
My family loved this recipe. I made a gluten-free one for my son using his regular gluten-free bread and it turned out great. Next time I would probably make 1/2 to 1 times more of the custard mix as the top was a bit dry but overall a yummy dish!
