My 200th post. I thought it would be something spectacular like boeuf bourguignon or something. Definitely not a chicken dish.
But, it has been a long, strange journey for me and my family over the last 20 months. Moving twice in one year (don’t recommend it) threw a monkey wrench into everything, but despite two breaks while moving we have kept up our game of a different meal every night. Some are not as creative as others but they all made us try foods and spice combinations we may not have otherwise eaten.
My kids love Mediterranean food. I think it is the combination of the savory and the salty. They love oregano, garlic, lemon flavors with the salty feta against it. Feta is one of those foods that is difficult to keep in my house. My children will eat it by the handful if I am not watching.

Verdict:
Everyone loved it. It had a nice lemony flavor with the bite of the oregano against it. Everyone ate two pita and there was still enough chicken for a tiny bit of chicken salad the next day.
I had to slightly alter the recipe as I did not have the red wine vinegar or lemon pepper called for in the original recipe
I made a Tzatziki dressing from sour cream; seeded, diced cucumber; garlic and dill. Served with tomatoes, onions, lettuce and feta in a soft pita this was a delicious, easy meal.
Ingredients:
- 1 – 1 1/2 lbs. chicken breast,
- 3 cloves garlic, minced
- 1/3 cup lemon juice
- 1 onion, diced
- 1/4 cup water
- 1 TBSP olive oil
- 2 TBSP white vinegar
- 2-3 tsp oregano, dried
- 1/2 tsp all spice
- 1/2 tsp black pepper
Directions:
- Spray bottom and sides of slow cooker with non-stick spray.
- Place chicken breasts in bottom of slow cooker.
- Mix all other ingredients in a small bowl and stir well. Pour mixture over chicken.
- Cook on low for 6-8 hours.
- Shred chicken prior to serving.
